Home Life: Making Pesto

I have a very large close extended family and when we get together on the weekends we love to spend it in the kitchen! We just love cooking together! This little blog post is just on one of the ingredients we made for dinner (one of my favorites!) PESTO! That night we used it as a spread for veggie sandwiches but some of my other fav uses are on pasta, bread, pizza spread, hamburgers, cheese & crackers, bruschetta and mozzarella omelets (okay I’m starting to feel like bubba on forrest gump). A family that cooks together… eats really yummy food together!

My “Go To” Pesto Recipe:

  • 3 cups packed fresh basil leaves
  • 1/4 cup toasted pine nuts
  • 1/2 cup extra-virgin olive oil
  • 1/4 cup freshly grated Parmesan
  • 1 garlic clove, peeled
  • Coarse salt and ground pepper

Toast the pine nuts on the stove in a dry skillet. Combine basil, pine nuts, parmesan, garlic, salt, pepper in a food processor or blender. As you blend add the olive oil to the mixture. Voilà!
